Suet is solid fat obtained from the kidneys and loins of cattle and sheep. Here at PEPITO, we use Category 3 fat, including suet, as an important raw material in processing, during which valuable processed animal fats and proteins are created that can be used in a variety of industries.
Among the beef raw materials (types of tallow) we source at PEPITO, the most notable are internal suet and trimming tallow:

  • Internal suet – also known as slaughter suet – is characterized by its firm consistency and richness in fatty acids, making it an ideal raw material for further processing.
  • Trimming tallow – also referred to as beef fat trimmings – is specific in its composition as it is a mixture of subcutaneous fat, fat around the muscles, and fat from the interior of the body cavity.
