Beef fat in its raw form is the unprocessed fatty tissue of cattle that a processing plant collects from slaughterhouses and cutting plants and renders into beef tallow. It is an umbrella term: it covers suet from around the kidneys and loins, beef fat trimmings from under the skin and from around the muscles, and other cuts with a high fat content.

Two words are easy to mix up here. Suet is the raw, hard fat from around the kidneys and loins, so it is one subset of raw beef fat rather than the whole of it, and the word is used for sheep fat as well. Tallow is fat that has already been rendered, that is, the result of processing rather than the input to it. Confusing suet with beef tallow in an enquiry therefore does not just mean a different fraction, it means a different stage of processing: a supplier will read the first as a selected raw material and the second as a finished rendered product.


Among the raw beef materials we source at PEPITO, the most notable are suet and beef fat trimmings:

  • Suet – also known as slaughter suet – is characterized by its firm consistency and richness in fatty acids, making it an ideal raw material for further processing.
  • Beef fat trimmings – also referred to as trimming fat – are specific in their composition as they are a mixture of subcutaneous fat and fat from around the muscles, arising during cutting.

What we source

We purchase raw beef fat of Category 3, chilled or frozen, free of sinews, hides and bones. What decides the resulting quality is less the type of fat than the time and temperature between slaughter and processing; a fresh, chilled input yields fat with a lower acid value and a lighter colour.

That feeds straight into what we are then able to offer. Our beef tallow has free fatty acids in the range of 0.6% to 7% and an acid value of 1.2 to 14 mg KOH/g. The lowest values go to cosmetics manufacturers, fats up to 5% FFA go to dog and cat food and bird feed, and higher values go to biofuels and technical applications.
